Fine dining & theatrics at MHR & Dream Academy's 15th anniversary

SINGAPORE - Millennium Hotels and Resorts (MHR) and Dream Academy have come together to celebrate both their 15th anniversaries with a night of fine dining and theatrics presented by its celebrity chefs and actors.
Called a Dream Date @ The Grand Shanghai, the birthday gala guests were invited to an eight-course menu designed by the hotel's chefs and got up-close and personal with local theatre stars like Dim Sum Dollies, Broadway Beng, Dr Teo Chew Moi and more through song, dance and comedy.

Chef Lap Fai of Orchard Hotel's Hua Ting Restaurant, Chef Ho Tien Tsai of Copthorne King's Tien Court Restaurant, and Chef Tang Yuen Hua of Grand Shanghai at Grand Copthorne Waterfront Hotel featured their signature dishes and each course was complemented with four different wines to elevate the flavours of the ingredients.
Highlights of the gourmet fare include a braised sea cucumber in crab roe sauce, Shanghainese steamed pork and crabmeat dumplings, and braised whole abalone in supreme sauce served with seasonal greens.
Dinner guests were spoiled with an East meets West selection of desserts with an Osmanthus jelly with wolfberry, fried egg white souffle with red been pastry - both are Grand Shanghai specialties - and a chocolate birthday dessert by Executive Pastry Chef Nicolas Maugard.
Mr Bhupesh Yadav, chief business & administration officer for MHR, said: "Culinary arts and performing arts are both creative art forms that go hand in hand."
By partnering with Dream Academy, Mr Yadav added that they are encouraging their employees to challenge themselves beyond their familiar creative sphere.
Ms Selena Tan, founder of Dream Academy, said that this "dream date" is a chance for them to know their audience and to make new friends.
